Tomato Basil Bisque

Tomato soup is a standard in many homes.  This recipe is light, allowing you to add in cream if you like.  All you need now is a grilled cheese sandwich, right?

  1. In a large pot, sauté the onion, carrot and celery in the olive oil over medium heat until vegetables wilt and onions brown lightly, about 10 to 12 minutes. Meanwhile, dice and seed tomatoes if using fresh. Add diced tomatoes and juices to the pot. Add in stock, chopped basil and butter. Stir until butter is melted and incorporated. Bring pot to a full boil then reduce the heat to a simmer and cook for 45 minutes. Adjust seasonings to taste. At this point, you can leave the soup chunky or use and immersion blender to puree all or part of it. Remove from heat. Add cream, if desired. Serve garnished with fresh parsley, basil, Parmesan cheese and your favorite grilled cheese sandwich.
