Prep the glass
  1. Pour a little ginger beer or rum into a saucer, just enough to coat the rim of a martini glass. Pour crushed cookies into another saucer. Dip glass rim into beer or rum and then into crushed cookies. Use alcohol free ginger beer or ale and omit the rum and schnapps for an alcohol free version.
Prep the cocktail
  1. Add ice to shaker. Add in ginger juice, rum and schnapps, cloves and egg white to shaker. Shake like crazy! The longer you shake it the fluffier the drink. When frothy, add in ginger beer and stir gently. Pour into glass and garnish with ginger crystals. Enjoy!
Egg free variation
  1. If you want to avoid raw eggs, yet still want a frothy drink, replace the egg whites with whisked whipping cream.
