Beet And Quinoa Salad

Vibrant in color, this savory salad makes a lovely side dish or whole meal.
Peel and coarsely chop beets, onion, garlic and parsnips. In a heavy skillet, melt butter over medium heat. Add vegetables and cook until slightly softened. Stir over medium heat adding in 1 cup of broth is absorbed about 45 minutes.
Combine the skillet veggies, quinoa and add in chopped greens. Adjust seasoning and enjoy warm or cool.
