Anna’s Chill Chasing Chai Tea

Anna has made chai for winter and autumn events for years–she just has a magic touch with it.  We managed to tickle it out of her.  Make up a large batch of the chai (leaving out the honey and milk) and store it in your fridge to reheat for daily use or for your next event.  Unlike store bought chai teas, you can control the sweetness here.

Instructions
Dry roast the herbs
  1. In large pan, dry roast all spices until the smell radiates and they start to pop.
Make the concentrate
  1. Add in the water and bring to a boil; steep for at least 10 minutes, up to 12 hours. Add in tea bags and steep for an additional 10 minutes. Strain concentrate and serve or store for later use.
To serve
  1. Reheat concentrate and serve with honey, milk and a pinch of sea salt.
Store
  1. Unsweetened chai can be stored in the refrigerator for up to 2 weeks.
